IGA Corn and Prawn Chowder

Corn

Serves 4

Mixing in a dish

4 COBS OF CORN
1 TBSP BUTTER
1 ONION, CHOPPPED
2 CUPS CANNED CREAMED CORN, (approx 2 x 310gr cans)
500GR (SOFT AND BROKEN) PRAWNS, PEELED AND CHOPPED
CHOPPED CHIVES TO SERVE

Prawns in bowl

Holding cobs upright on a board, slice down the sides to remove the kernels.

Reserve corn kernels, and place cobs in a pot with 6 cups of water and a big pinch of salt.

Simmer cobs for 1 hour then remove from pot and set corn stock aside.

Meanwhile, gently saute onion and corn kernels in melted butter until softened.

Add corn stock and creamed corn and simmer for 20 mins.

Stir in prawn meat and simmer for 5 minutes to poach the prawns.

Serve chowder in bowls sprinkled with chopped chives.
